100% raw wild honey.
ORIGIN

EXTRACTION PROCESS
The extraction process is completed very carefully in order to not create any heat or unwanted handling with the honey.
The harvested honey is placed in boxes in a room pre-heated at 27C to undergo a natural dehumidifying process to remove the high water context to prevent the honey from yeasting. The process is finalized when the honey reached an 18-19% water content.
At which point, the extraction process begins. The honey flows slowly into a large tank with filter walls in 3 different chambers before being transferred into yet another even bigger tank. The honey then rests in the new container for 2-3 days, so all the wax and particles that are left from the extraction is brought to the surface for removal. At that point, the honey is almost completely clean. It is however subjected to a final straining process where it is tapped from the bottom of the tank and ran slowly through a finer filter that removes the remaining big particles.
The honey is then taken to a stirring tank so the crystals can be crushed into finer elements over the course of 3-6 weeks.
The honey is then finally packages in glass jars.
